We start with governance—decision rights, risk and a Critical Path—then move fast on market intelligence and site research to create a ranked shortlist across trade zones, footfall and extraction/licensing viability. In parallel, we define concept & brand foundations (guest promise, menu architecture, pricing) and build an investment-grade financial model (5-year P&L, cash flow, sensitivities).
Once a site is targeted, we lead property acquisition & legals (offers, HoTs, due diligence, Licence to Alter). We translate vision into buildable reality via design, MEP and extraction, then secure planning, licensing and compliance. During procurement and build, we lock programme and budget, manage long-leads, and control change. We stand up the operation with supply chain & menu engineering, a practical tech/data stack (POS→dashboards), and people, culture & training (SOPs, service playbook).
Go-to-market is choreographed: brand toolkit, 90-day marketing, and a pre-opening/launch programme (softs, drills, EHO sign-off). Post-opening, we drive a 30/60/90 optimisation cycle (COGS, labour, throughput, NPS) and, if engaged, provide ongoing management—ops audits, commercial control, CX calendar, compliance and quarterly strategy.
